In the meantime, with spring in the air, us ladies in the office, have been on the topic of food, what we have growing in our spring gardens , what we are harvesting, eating and enjoying!  So we thought, let's share it with our amazing community - that's you!

Taste of Spring

Juicy tomatoes, fragrant herbs and a beautifully simple dressing, fresh, colourful and made for long lunches outside.

Ingredients:
1 small or 1/2 medium red onion, thinly sliced into half-moons
3 medium heirloom tomatoes, cored and sliced into 2cm-thick half-moons
1/4 cup packed fresh herbs, such as basil, coriander, dill, parsley, or a combination of what you have in your garden, coarsely chopped
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Place 1 small thinly sliced red onion in small bowl and cover with cold water. Let stand while you prepare the rest of the ingredients, about 10 minutes.

Place 3 medium sliced heirloom tomatoes in a large bowl. Add 1/4 cup coarsely chopped fresh herbs, 2 tablespoons extra-virgin olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.
Drain the onions and add to the bowl.
Toss to combine and let stand for at least 10 or up to 30 minutes before serving.
Taste and season with more kosher salt, black pepper, vinegar, or olive oil as needed.
